In rehab, it’s usually meant as the time your body needs to clear itself of the toxins that have built up inside.
Recently, it’s also done outside rehab in some health centers (think drinking loads of water is a big part of it but I’m not sure, I never tried it).
Anyway, basically to detox means to rid your body of any bad things inside. That’s it plain and simple, though for the procedure you’d have to ask someone else.

In our lives we are exposed to and absorb toxins that are potentially harmful to our well-being and our feeling of “wellness”. Today our environment is toxic and the foods we eat, even the air we breathe and the water we drink is laden with chemicals foreign to our system. Our bodies naturally detoxify to maintain life and health. Every so often we can boost our wellness factor by detoxification programs to help get rid of those chemicals which slow us down, to make us feel better and more alert. Poor diet, chronic stress, exposure to pollution and free radical damage can all have a detrimental effect on our bodies. Our body is designed to utilize natural substances, which includes foods, herbs and phytochemicals. Any foreign substance will serve as a stimulus to our immune system, which has the function of removing these substances. Although the toxicity of a chemical may vary, it is the job of the liver to reduce toxins into compounds that the body can safely handle and eliminate through the kidneys (as urine), skin (as sweat), lungs (as expelled air) and bowels (as faeces). Maintaining these eliminative organs in good working order is essential for one’s good health to continue. While there are many detoxification programs available, they differ in their actions and their intent.

Pulses beans and lentils dried or canned in water.
Potatoes, Fresh fish, Nuts unsalted
Live natural yogurt, Honey, Herbal or fruit teas.
And what to avoid:
Red meat, chicken, turkey, and meat products like pate burgers and sausages.
Dairy products including margarine
Food containing wheat such as pies pastry, cereals etc.
Crisps and savoury snacks
Processed foods, ready meals, and take-ways.
Alcohol, Coffee and tea, Salt
